For this one we take a case of our signature N . M ‘ Flakey Pie Dough, fill it full of a pistachio frangipane stud it with Irish Raspberries from Malones fruit farm in Carlow and give it a good hard bake to caramelise the top of the frangi. Once its out of the oven we give it a good brush of raspberry syrup to double down on the flavour.
Everyone seems to be obsessing over pistachios at the minute so this is very much on trend. Each bite is nutty and buttery with good auld bursts of sour raspberry deliciousness. It’s not to be missed.
Warm it up and have it with a dirty big lump of ice cream - the epitome of summer lovin’
